Necessary Tools
Before starting, make sure you have the right tools:
- An oyster knife.
- Oysters.
- A mesh glove or a thick cloth to protect your hand.
- A cutting board or a stable surface.
Step-by-Step Guide to Opening an Oyster
At Ostras Sorlut, our expert oyster shuckers use four simple steps to open them:
1.- Protect Your Hand
Although our experts usually don’t use protection due to their skill, it is highly recommended to use some form of protection, such as a proper glove, to prevent accidental cuts.
2.- Oyster Position
Hold the oyster with the flat side facing up and the hinge pointing towards you.
3.- Insert the Knife
Insert the tip of the special oyster knife into the upper left part of the oyster, where the two shells meet. Apply some pressure until the tip goes in.
4.- Move the Knife
Once the tip of the knife is inside the oyster, move your knife-holding hand up and down until the oyster opens.
5.- Cut the Muscle
Once opened, proceed to cut the oyster’s muscle to release it.
6.- Check the Oyster
Make sure the oyster is perfect and clean, ready to be consumed.
